Cracked Sugar Cookies

These are my new favorite Christmas cookie – at least for this year. Not only are they delicious, they are pretty quick to make. No refrigeration required. No rolling and cutting and decorating – unless you want to. My husband made the first batch, and I’ve made three batches as well. But I have to tell you that my husband is the one who has been accused of being a “cookie connoisseur”. He found the original recipe at Allrecipes.com, and then tweaked it. Here is his version:

Cracked Sugar Cookies
1 1/4 c. white sugar
1 c. shortening (butter flavored if you have it!)
3 egg yolks
2 tsp. vanilla extract
1/2 tsp. almond extract
2 1/2 c. flour
1 tsp. baking soda
1/2 tsp. cream of tartar
1/4 tsp. salt

Mix sugar and shortening, then add egg yolks and extracts. Mix well. Add flour, soda, cream of tartar & salt, and mix just until well blended. Form dough into walnut sized balls, dip in colored sugar, or roll it completely in white sugar. Bake at 350 degrees for 10-11 minutes, until tops are cracked and just turning color. Cool slightly, then remove from baking sheet to finish cooling on racks.

    I gave this recipe to the teen as she wanted to make cookies but didn’t want to roll them all out. They were very yummy. Hers fell apart. I think she needed to make each one a little bigger.

    It’s a fairly dry dough too. You could add an extra egg yolk to help it stay together. I had to really press the dough together to form the balls.
